gluten & dairy free pancakes
At the beginning of the year I mentioned that we were attempting to go gluten and dairy free, and is something we are still very much attempting! At home we have pretty much cut it out of every meal, with the exception of a few chocolately treats here and there! But there are sometimes where I find myself craving certain foods and one morning it was pancakes. So I thought I'd give it a go with gluten free flour and almond milk and the results were great, I don't think I even noticed the difference!
I didn't follow a special recipe, just substituted the ingredients (and I usually just make up the amounts for pancakes!) but here is a simple recipe:
Ingredients:
125g Gluten Free plain flour
1 egg
250ml Almond milk (or any other dairy substitute)
Oil for frying
a pinch of salt and sugar
Method:
Sift flour into a large bowl and make a well in the middle
Crack the egg in the middle and pour in a 1/4 of the milk
Whisk together, we used a hand whisk but an electric or mixer would do the job too!
Once you have a paste add the remaining milk and mix until all lumps are gone
Leave for 20 mins
Heat up a small amount of oil then pour a small amount of mixture into the pan and swirl it around to cover the pan. Cook until slightly brown then flip!
I let Theo help me with a lot of the preparation, going along with practicing Montessori at home. He's getting pretty good at cracking eggs and loves using the sifter and hand whisk. He even poured the mixture into the pan, but that required all of my supervision! It's fun to see him so involved with the process and then of course eating the results!
I like to have savoury pancakes, so choose avocado and marmite whilst Theo, as you can see went for jam!

avocado and marmite! I'll have to try it! I love them both but never thought of them together x
ReplyDeleteIts such a good combo, and if you are eating dairy try grated cheese too! (Also marmite and cheese on crumpets is always a winner!)

DeleteOh these sounds great, I love you added Avo to your savoury one. I started drinking Soya/Oat milk about 8 years ago and haven't looked back but Gluten is much harder to cut out, so glad to see your sticking to it, we are trying to cut down slowly and this recipe is perfect for those mornings you want a treat :)

yeh exactly, it's nice to be able to find an alternative that you really like. Have you ever tried to make your own oat milk? I love spontaneous pancake mornings!

DeleteVery impressed by your massive thin pancake!!! Like a pro! Have you ever tried buckwheat flour? It's a great GF flour for pancakes, but does have a very strong taste I like to disguise with 'gingerbread' spices or berries and vanilla. I've recently gone dairy free and really missing my raw milk...can't always substitute that thick creamy goodness.
